Red wine–poached Ontario pears, steeped with cinnamon and orange peel, bring all the warmth of fall into this loaf. Paired with creamy gorgonzola and finished with a drizzle of balsamic, it’s equal parts sweet, spiced, and savoury.
Think of it as a fall cheese board in focaccia form — comforting yet elevated, perfect for crisp evenings and long tables.
Ingredients:
Sourdough starter, 00 flour, water, olive oil, fine sea salt, honey, Ontario pear, red wine, sugar, cinnamon sticks, orange peel, gorgonzola, balsamic vinegar.
Size:
8x8" square | Serves 3–5.
Best for:

Reheating Instructions:
