Crafted with our slow-fermented sourdough, this focaccia is layered with a mix of buttery green and kalamata olives and seasoned with herbes de Provence. The briny olives bake into the dough, creating pockets of salty richness, while the herbs bring an earthy, aromatic finish. The crust is golden and crisp, while the inside stays pillowy and deeply flavorful.

Ingredients:
Sourdough starter, 00 flour, water, olive oil, honey, green butter olives, caleberese olives, kalamata olives, herbes de Provence, flaky sea salt.

Size:
8x8" square | Serves 3–5 comfortably as a side or snacking loaf.
